  • 1 large honeycrisp apple
  • 1/2 cup vegan butter
  • 1/4 cup water
  • 1/2 tablespoon cornstarch
  • 3 tablespoons brown sugar
  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water)
  • 1.5 cups all-purpose flour
  • Pumpkin pie spice

Instructions

  1. Prepare the apple filling by simmering chopped apples with water, cornstarch, brown sugar, lemon juice, vegan butter, and pumpkin pie spice until soft. Allow cooling.
  2. In a mixing bowl, cream together vegan butter and sugars. Add the flax egg and vanilla.
  3. In another bowl, whisk together flour, baking powder, pumpkin pie spice, and salt before combining with the wet ingredients.
  4. Preheat your oven to 350°F (175°C). Scoop dough, fill with apple mixture, seal and roll into balls before placing on a baking sheet.
  5. Bake for 12-15 minutes until golden around edges.
