  • 2 medium zucchinis, sliced into rounds
  • 1 can (400g) chickpeas, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 small red onion, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup crumbled feta cheese
  • 1 tablespoon chopped fresh parsley for garnish

Instructions

  1. Preheat the oven to 400F (200C).
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, combine zucchini, chickpeas, red bell pepper, and onion. Drizzle with olive oil and sprinkle oregano, smoked paprika, salt, and pepper over the top. Toss until evenly coated.
  4. Spread the mixture on the prepared baking sheet with space between each piece.
  5. Roast in the oven for about 25-30 minutes, tossing halfway through until golden brown.
  6. Sprinkle crumbled feta cheese over the top and return to oven for an additional 5 minutes.
  7. Remove from oven, garnish with parsley, and serve warm.
