  • 2 cups shredded zucchini (squeezed)
  • 1 cup Panko bread crumbs
  • 2 eggs
  • 1/3 cup fresh grated Parmesan cheese
  • 1/4 cup finely shredded Mozzarella cheese
  • 2 garlic cloves (minced)
  • Salt and fresh cracked black pepper
  • 3 tbsp canola oil (for cooking)

Instructions

  1. Grate the zucchini using a box grater and squeeze out excess liquid using a mesh bag or cheese cloth.
  2. In a mixing bowl, combine squeezed zucchini, Panko bread crumbs, eggs, Parmesan cheese, Mozzarella cheese, minced garlic, salt, and pepper. Mix until well combined.
  3. Preheat a large pan over medium heat and add canola oil.
  4. Scoop even amounts of the mixture into the pan and shape into fritters using your hands.
  5. Cook for 4-6 minutes on each side until golden brown; flip only once for best results.
