  • 1 clove garlic (grated fine)
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg
  • 2 tbsp fresh chives (chopped or 1 tbsp dried chives)
  • 1 tbsp fresh parsley (chopped or 1/2 tsp dried parsley)
  • 1 tsp fresh basil (chopped or 1/2 tsp dried basil)
  • 1 tsp fresh oregano (chopped or 1/2 tsp dried oregano)
  • A pinch of salt and pepper
  • Tomato sauce (for dipping)

Instructions

  1. Preheat the oven to 400˚F and grease a baking sheet with oil.
  2. Grate the zucchini and squeeze out excess moisture.
  3. Combine the zucchini, grated garlic, egg, breadcrumbs, cheese, herbs, salt, and pepper in a mixing bowl.
  4. Shape the mixture into one-inch balls and place them on the baking sheet.
  5. Bake for 15 to 18 minutes until golden brown.
  6. Serve warm with tomato sauce for dipping.
